The Chefs Choice Diamond Knife Sharpener Angle Select with Brushed Metal Cover is able to sharpen knives at the correct and most precise angle, the spring knife guides the knife to the correct position before sharpening at an angle.

To use the knife sharpener, firstly select the correct angle for your chosen knife and use the 100% diamond abrasive discs to restore and hone the blade. Then, use the flexible stropping/polishing discs to provide a razor sharp and durable edge.

Stage 1 - uses fine diamond abrasives set at a 15 degree angle to sharpen and hone Japanese knives.
Stage 2 - uses fine diamond abrasives set at a 20 degree angle to sharpen and hone American/European knives.
Stage 3 - is the finishing stage for all knife blades and uses flexible stropping/polishing discs to create a microscopically flawless edge. Stage 3 is also used to sharpen serrated blades.
